We’re elevating the spring vibes and fast-forwarding right to summer with a bright, fresh salad inspired by island life. Our Caribbean Bean Salad includes protein from savory black beans, as well as the sweetness of a fruit native to the sunny region: mangoes!
Did you know the Caribbean Island of Nevis is home to more than 40 different types of mangoes?! Each has a distinct texture and flavor (and delightful names too, including Polly, Julie, and Graham). The island even holds an International culinary festival each year to show off the fruit’s range of uses.
Our recipe lets the mango shine with a simple oil and vinegar dressing to tie it all together. Grab your fork and these ingredients to get started:
1 can (15 oz.) black beans, drained and rinsed
1 cup mango, diced
¾ cup tomato, diced
1 ½ Tbsp. vegetable oil
4 ½ Tbsp. vinegar
1 ½ tsp. oregano
1 head romaine lettuce, rinsed
Salt & pepper, to taste
First, dry and chop your head of romaine lettuce. Scoop it all into a large serving bowl.
Next, combine all remaining ingredients in a medium mixing bowl. Give it a good stir and taste test. If it needs a little salt and pepper to enhance the flavors to your liking, go ahead and add that now.
That’s it! Top your greens with the blended Caribbean Bean Salad mixture and toss it all together. You’ll have enough for 4-6 people, depending on the appetites of your family or guests!
